We scoured the world for the most intriguing grapes and sourced them from some of South Australia's finest regions. The Mediterranean climate and alluvial soils yielded one of our most complexly layered wines while maintaining the approachability and balanced acidity that makes SALDO stand out.

The 2023 Pastori Vineyard Zinfandel from Alexander Valley benefited from an unusually wet winter and a mild, steady growing season, with late harvest yielding small, concentrated grapes of exceptional quality. Hand-harvested from old vines at Pastori, the fruit was fermented in stainless steel for freshness, with a portion of juice removed by saignée to intensify flavor and color. Aging in 40% new American oak barrels and malolactic fermentation further softened acidity and enhanced texture, resulting in a vibrant, balanced wine that is both immediately enjoyable and age-worthy.

This single vineyard Syrah hails from Orsi vineyard, minutes south of the township of Healdsburg at the cooler, more southern end of Dry Creek Valley. This vintage 2022 Syrah is elegant on the nose with concentrated aromas of black plum, elderberries, dark chocolate, soy, subtle black pepper spice and a nuanced herbal thread interwoven in the complex bouquet.

From the moment you lay your eyes on its rich, honied hue, one thing is clear: our Falanghina is special. Grapes are hand-harvested from a small block of vines in the Clarksburg AVA, where the climate mimics the Italian coast Falanghina calls home. Much like a red wine, we leave the grapes to ferment on the skins to gain structure, weight, and beautiful color. We’re left with a citrusy, bright pour that’s balanced by a pleasant weight courtesy of the skin contact process.

The bouquet on this 2023 Skins fermented Falanghina is a glorious mix of lemon zest, bright dried apricot, ginger, chamomile, some nuanced floral notes, quince, pears and honey.  It has a chalkiness in the background alluding to its time on skins and oxidatively handled fermentation, which adds complexity and intrigue.

The 2024 Mendocino County vintage was shaped by early-season rains and a warm summer, resulting in grapes with bold ripeness and lively acidity. Organically farmed and harvested at peak freshness, these grapes deliver an elegant red fruit profile with bright acidity. Gentle pressing and careful taste-based selection ensured only the best juice made the blend. After cold settling and racking off heavy lees, the wine was fermented slowly at cool temperatures in stainless steel tanks, preserving its fresh, fruity character and vibrant style.

Our Carignan is sourced from family owned and run Pastori Vineyard in Alexander Valley. The vines are truly majestic at 75+ years of age, are head trained and produce concentrated low yields, perfect for making great wine!

The Carignan 2022 presents a captivating bouquet of blackberry, red cherry, dried cranberry, and strawberries, layered with subtle hints of leather and tobacco. Its aromatic profile is enriched by brown spices, including clove and nutmeg, which add a touch of complexity. On the palate, the wine is soft and fleshy, showcasing a harmonic balance that makes it incredibly approachable. With a refreshing acidity and a round mouthfeel, this Carignan delivers a delightful experience from the first sip to the lasting finish.

The 2023 SALDO Petite Sirah Bavarian Lion Vineyard is a striking balance of power and elegance, shaped by a cooler vintage and thoughtful winemaking. Aromas of ripe black fruit and hints of spice mingle with subtle tobacco and cocoa, while bold blackberry and mocha flavors are framed by firm tannins and bright acidity for a complex, food-friendly palate.

This wine’s distinctive character is rooted in the Bavarian Lion Vineyard, established in 1996 in Knights Valley—an area nestled between Alexander Valley and Napa Valley. The vineyard’s well-drained volcanic soils and unique microclimate, created by encircling mountains, enable Petite Sirah to achieve intense flavors, deep color, and balanced acidity. Family-owned, sustainably farmed, and meticulously managed, Bavarian Lion Vineyard produces impeccable fruit that truly expresses the quality and character of this remarkable appellation.

The 2024 Saldo Carbonic Zinfandel comes from an excellent Sonoma County vintage, with early rains and warm days producing bold, ripe fruit. Using whole-cluster carbonic fermentation in stainless-steel tanks, we gently preserve the fruit’s natural freshness while keeping tannins soft and silky.

This Zinfandel entices with aromas of kirsch cherry, bubblegum, bananas, and a hint of spice. Lively flavors of juicy cherries and creamy red candy fill the palate, finishing with velvety tannins, dark chocolate, and subtle leaf tobacco notes.

The 2024 growing season in Clarksburg brought ideal conditions for Falanghina, with warm days and cool, breezy nights promoting vibrant ripening and preserving natural acidity. Harvested at peak ripeness, this wine captures the vintage’s purity and varietal character, delivering outstanding balance, freshness, and a lingering finish.

Gentle winemaking techniques—including soft punch-downs and cool stainless steel fermentation—preserved Falanghina’s lively aromatics and bright acidity. The nose offers notes of honey, pineapple, white flowers, and ginger candy, while the crisp, dry palate features red apple, orange peel, and stone fruit, all supported by a refreshing structure and persistent finish.

A half bottle (375mL) of Saldo Zinfandel. Dark ruby color with bold aromas of black licorice, black pepper, cherry, and baking spice. The entry is rich, full, and scintillating. The palate is mouthwatering and smooth with a hint of chocolate. The finish is voluptuous with soft, velvety tannins.

The 2023 Carignan harvest in Alexander Valley, California, benefited from a cool, wet winter and spring that delayed the growing season, followed by a moderate summer and warm, dry conditions in late summer and early fall. This led to a slightly later-than-usual harvest between late September and mid-October. Sourced from vines over 75 years old, the grapes exhibited excellent concentration, with average to slightly above-average yields and remarkable color, balanced acidity, and depth of flavor thanks to the longer hang time. Winemakers expect the vintage to produce vibrant, structured Carignan with fresh red fruit and herbal notes, making 2023 a promising year for both varietal and blended wines from the region.
