Made from 100% Sauvignon Blanc grapes hand-harvested from two vineyards, Wappo Hill in the Stag’s Leap District and River Oaks in Alexander Valley. The two locales provide distinct qualities our founders love: Wappo Hill brings citrus, melon, mouthwatering acidity, and unique minerality to the blend, whereas the warmer climate at River Oaks lends elevated tropical tones such as passionfruit and pineapple.
All grapes were hand picked into half ton bins and delivered to the winery in the early hours of the morning for optimal grape quality. Upon arrival, grapes went directly into the press where skins, seeds, and stems were separated from the juice. Free run and press fraction were kept separate throughout the process. After pressing, each lot was inoculated with yeast and barreled down into both new French and neutral oak. Additionally, different barrel sizes and shapes (cigare and puncheon) were used to have complete integration of subtle oak characteristics. With these barrel selections, we can ensure that we have the perfect complement of toast, barrel sweetness, and texture with the acidity and fresh fruit components from the wine. There is 24% new French oak with the balance of once filled and neutral oak for five months of barrel aging.
